    Chef Miguel Navarro's culinary vision seeks to move diners through authentic flavors, refined techniques, and impeccable execution — a reflection of his own life journey, in which the guest becomes a participant.
    This vision is complemented by a carefully curated selection of wine pairings, featuring exquisite national and international labels that complete the tasting menus offered at Es Fum.

    Origins and Early Steps

    Miguel Navarro began his professional career at the age of 16 as an apprentice at his family's restaurant on the island of La Gomera. His passion for cooking led him to study hospitality in Tenerife, where he also gained early experience working in several hotels across the island.

    Training in Europe’s finest kitchens

    In 2000, he completed his first internship at Restaurante Martín Berasategui (3 Michelin Stars) in the Basque Country. In 2005, he joined the team at the Ritz-Carlton Abama Hotel, where he contributed to earning the first Michelin Star for MB Restaurant under the direction of Berasategui. His journey continued in 2010 in Germany, working at the 3-Michelin-starred Restaurant Aqua led by Chef Sven Elverfeld at The Ritz-Carlton Wolfsburg. He further honed his craft at some of Europe's most prestigious kitchens, including Piazza Duomo in Italy, Azurmendi in Bilbao, and El Celler de Can Roca in Girona—each awarded 3 Michelin Stars.

    Leadership at Es Fum and return to his roots

    For three years, Miguel Navarro was part of Martín Berasategui's team in Barcelona, serving as Second Chef de Cuisine alongside Paolo Casagrande at the 3-Michelin-starred Lasarte Restaurant. Since 2017, he has held the position of Executive Chef at Es Fum, awarded 1 Michelin Star and a Sol Repsol, located at The St. Regis Mardavall Mallorca Resort. His arrival in Mallorca marks a return to his roots, to the homeland of one of his grandmothers, where he brings to life his culinary vision with sensitivity, precision, and a deep respect for product.
